Zones Panel
Zones are created and removed on demand as you open and close applications. In the zones panel you can manage, organize or switch to your currently running applications.
You can access the zones panel via the toolbar by simply clicking on the icon, or you can use the Alt+Tab keyboard shortcut.
The simplest way to explain zones is to break it down into 3 processes; Choose, Switch, and Manage.
Choose
When you launch an application you are presented with pop-up. The pop-up is interactive and displays the number of zones you currently have running, plus a ‘new zone’ which contains an animated timer. By default the application you are launching will launch in the ‘new zone’ unless to click one of the existing launch in the ‘new zone’ unless to click one of the existing zones.

Switch
You can switch zones in two ways, via the toolbar or by using the keyboard shortcut Ctrl+Tab. Once you have accessed the zones panel you can click (or Ctrl+Tab+Tab) to select an alternative thumbnail to switch to that application and corresponding zone.

Manage
You can manage or organize your zones by dragging your application thumbnails into alternative zones. If a zone only has one application running in it and you drag that application into another zone it will automatically be deleted, or in other words you cannot have an empty zone.

You can also create new zones by dragging an application thumbnail onto the far right hand area as illustrated below.

Zones
In 2.1 when I open an app it automatically opens in a new zone, I don't get the zone browser - is there a pref for this (I can't find one)? I'm actually in favour of this behaviour to be honest, having to go through the zone browser every time I start up an app would not be a good UX.
